In a (pistachio) nutshell, Saffron & Honey is about British baking with a Middle Eastern twist, but more specifically, it’s an homage to our Palestinian heritage. Our rotating menus boast traditional Palestinian recipes, as well as translations of classic Middle Eastern flavours into popular baking staples. Think West Bank comes to West London.

So, why Saffron & Honey? We went through a whole lot of potential brand names when we first started brainstorming, many of which were interesting to say the least. Ultimately we landed on Saffron & Honey because the versatility of the two ingredients across savoury and sweet dishes fits nicely with what we try to do in our kitchen. Saffron is a strong but subtle flavour - one we enjoy infusing into main dishes as well as desserts, and honey, nature’s nectar - encompasses the organic sweetness of home baking.

Saffron & Honey was born in a West London home kitchen, and that’s where we hand make all of our bakes to this day. Mama Eman leads with her family recipes refined over generations, and I enjoy blurring the lines between Eastern and Western sensibilities. So, you could say that she’s the saffron and I bring the honey. All of our items are individually handcrafted and homemade, so every bite brings with it a taste from an authentic Palestinian home. Our kibbeh is unparalleled, our knafeh elite, and our cookies will always leave you wanting more. And it is only because of the depth and richness of our Palestinian culture that we’re able to share this with you.

The Levant is a melting pot for culinary diversity, and whilst many nations will have their own interpretation of knafeh, no one does it better than the Palestinians. Here at Saffron & Honey we like to think of ourselves as the home of knafeh innovation; from cupcakes to doughnuts, we’ve tried putting knafeh in several forms - but our knafeh cups are by far the most popular item on every menu. Our cheese cup consists of a shredded phyllo dough, stuffed with a cheese and cream filling and soaked in a sugar syrup, and our vegan knafeh is packed full of nuts instead.

Putting knafeh at the forefront of Saffron & Honey is about highlighting Palestinian identity through food. Reclaiming recipes and ingredients that have been appropriated over time is at the very core of the Palestinian resistance: that’s why we donate all sales from our knafeh products to aid relief in Gaza. We believe in giving back to the communities that birthed generations of Palestinians in the diaspora, whose traditions and culture without which we would not be here. Palestinian resistance is mostly about simply existing, and so our mission here at Saffron & Honey is to spread awareness of Palestinian culture through our products. We want our menus to speak of the ingredients and the land they came from, and its beauty.
